Default Pita Pizza Recipe

Thought I'd share this recipe I made over the weekend

For each pizza:

1 Sahara low-carb whole wheat pita (they're really high in fiber)
1 oz part-skim shredded mozerella
2 T tomato sauce
6 slices Hormel Turkey Pepperoni
1/2 t extra-virgin olive oil
garlic powder
dried basil
dried oregano

Brush each pita with the olive oil, and top with tomato sauce. Sprinkle with garlic powder and herbs to taste. Top with pepperoni and cheese. BAke in a preheated 500 degree oven for about 8 minutes or until cheese has melted.

Sounds good!

Here's another recipe along the same theme..

Mock Calzones

1 low fat flour tortilla (regular or whole wheat)
1 or 2 Tbsp. grated mozzarella cheese
1 Tbsp. chopped onions, black olives, and/or roasted red peppers
1 Tbsp. tomato or pizza sauce (or use diced tomatoes)
pizza seasoning to taste

Spread half of tortilla with cheese, going all the way to the edge. Top cheese with remaining ingredients, but stay within a half inche of edges. Carefully fold the other half over so it meets well. Place in a skillet over medium heat and heat, pressing out edges as cheese melts. Carefully flip and heat other side. Cut in wedges and serve with additional sauce for dipping if desired. Makes an easy snack, and kids like it.

I make something similar, only I will have to check out the Sahara pita. I put a couple tablespoons of Pizza Quick sauce on the pita, top it with chopped vegetables (onions, broccoli, carrots, or whatever else you'd like), an ounce of Mozarella and pop it in the toaster oven until the cheese melts. MMMM
