Mint Salad

  • 1 cucumber (seeded and diced)
    1 large tomato (diced and ripe)
    4 tbsp red onion (diced)
    1 clove garlic (crushed)
    1 tsp mint (dry)
    1 tbsp red wine vinegar
    2 tbsp virgin olive oil
    1/2 tsp salt
    1 tsp ground black pepper

    Mix together and refrigerate for about 1 hour. It goes great with a steak!
