Default Diet Cakes recipes?

Hi,

I am on a diet but love to eat cake.

Who knows great recipes for dieters?

You can try Skinnytaste because all of her recipes are AMAZING (although I've only made a few of her desserts) or Chocolate Covered Katie for ideas.

I think so few responses because the hard truth is, cakes are inherently off limits for most dieters due to their composition...flour, sugar, fat. Yum

Some have success with reduced calorie versions, substituting Splenda for some of the sugar, fruit purees for some of the fat ...but one still has to exercise portion control.

For me, just the word "cakes" is an instant vision of a layered, shiveringly sweet, moist slice of deliciousness that starts my stomach growling and sends me down the Evil Thinking Path a place where I try so hard to avoid.

I like to make single servings of cake using whatever granular sweetener I have on hand (right now that's Swerve). If you google recipes for "making one cupcake" or whatever you'll find some. They're also on Pinterest. You can even cook them in the microwave if you want - I take a single cupcake recipe, put in a coffee mug and heat for about two minutes.

I love cake, too. Yum yum.

I saw this one yesterday and it looks delicious: http://www.budgetbytes.com/2015/04/carrot-cake-for-two/

I bet it would be great even without the icing.

what a great find!! I agree, I would be happy with a little cinnamon on top.

Should be very easy to calculate calorie count also.
