Love it! It's always part of my salad dressing! Great with goat cheese and nuts or even blue cheese. Yummy~

Aren't all balsamic dressings full of sugar?

This is my favorite as well! We got a pomegranate infused balsamic while in Denver. It wasn't ridiculously priced (maybe $18/bottle?). You don't have to use much. I mix it up with EVOO, water, garlic, and mustard powder for a salad dressing. It's fantastic with a salad of romaine, roasted red peppers and feta cheese. Also makes a great marinade for chicken. I don't know anything about the health benefits, just that it's tasty ;)

Oh I love balsamic vinegar! There is nothing in it to help with weight loss, but it's a low calorie / fat free way to add a lot of flavor to so many things.

The funny thing about balsamic vinegar is that most inexpensive and/or supermarket balsamic isn't really balsamic vinegar at all. Just a knockoff that can't compare to the real thing.

I once bought a little balsamic tasting kit that had 4 small bottles, aged from a few years up to 25 years. It gets thicker and sweeter as it ages in the wood barrel. The difference between each was amazing! Like some of you, I have also found some fantastic real balsamic at TJ Maxx. My best score was a gorgeous bottle of Italian balsamic that was so thick it coated the sides of the bottle, and it was quite aged. It looked almost like a vintage perfume bottle with a cork. I paid just $15 for it. It was so good that I found myself sipping it by the spoonful :T I have also paid $100 for a bottle of very old balsamico tradizionale as a gift for a special occasion, but only once. I much prefer prowling TJ Maxx :)
