tinneranne-haha that is an interesting combo


Salad with romaine, watercress, berries, avocado, and a balsamic reduction dressing I made. A small gluten free vegan pizza with tomato slices, bell pepper, and onion toppings. I feel like I should be really full but I'm not! Honestly I could eat more and am still a little hungry......weird.....
Was a -3 and ended +1. :/

A splurge meal last night. Enchilada pasta, which was made with egg noodles and had black beans, corn, green chilies, cheese and greek yogurt. Had half a chicken breast for extra protein.

And remembered why I avoid pasta. lol Couldn't stop eating!

Turkey smoked sausage w/ sauerkraut
And small severing of mashed potatoes
So filling. And it hit the spot for comfort food.

Last night we had some grilled marinated chicken thighs (my boyfriend is really obsessed with concocting as many marinades for chicken thighs as possible), and I just made some egg noodles for everyone else, some peas, and some corn. I hardly ate yesterday, but I didn't feel like cooking after my day of making meatballs, nuggets, marinara, two kinds of soup, and egg muffins. I did all of that before 9:30am!

Spring rolls. The obsession continues haha its just that they're delicious and happen to be ridiculously low calorie. Tonight I stuffed them with spinach, sweet potato, carrots, and a little tofu. And I made my peanut sauce(without the sesame oil though ) Its really a lot of food for very little calories! I'm actually stuffed right now which is so weird since I feel like its "wrong" to be so full on a fasting day lol Was a -4 and ended +4.

Slow cooker potato soup. Added a few cubes of frozen squash puree to the pot and it turned out great.
