I thought i was doing well for lunch today when i had a plate of yummy singapore noodles at a little malaysian restaurant i'd never been to before.

But then i found i was quite hungry later on so i had to eat a rice cake from a local foodie shop. It was yummy.

Got hungry again on the way home and decided to stop at the shopping centre where i had 2 plates of sushi from the sushi train. I had
1 plate with avocado, deep fried prawn, rice, teriyaki sauce
and
1 plate with i actually can't remember but it was smaller than the first one.

I probably won't have much dinner tonight but i can leave it til i get back from choir now that i've had a coffee and a piece of coconut.

1/2 cup cottage cheese with 1/2 cup pineapple tidbits. Also an apple with about 2 tbsp of PB.

I'll probably have carrot sticks and hummus as a snack before I head to the gym later. Was going to have it as part of my lunch but I was full!

Smile Yummy Eggplant Lettuce wraps..impromptu!

I was about to make lettuce wraps and realized I didn't have a any tofu and I wasen't in the mood for chicken... uh oh. I had to get creative and I used eggplant instead. It actually worked out great. Super healthy and delicious!

All I did was cube tomatoes and egg plant, and throw them in a sautee pan with fresh garlic and olive oit. I added organic white beans for some added protein. Sautee it up stirring constantly and its ready to serve.

I put a little hummus on the lettuce before topping for added flavor and sprinklr the top with a little fresh mozzarella!

So good!

Today was super yummy. It was a 1/2 lb burger seasoned with taco seasoning wrapped up in iceberg lettuce leaves. So good.

I made my first ever fruit & veggie smoothie...I only tried it because I bought like a 4 pound bag of spinach from Costco that I can't possibly eat before it goes bad without freezing some of it lol But, tastes good...we'll see if it holds me over.

I used...
1 orange, peeled
Juice from half a lemon
1 banana
1 apple
2 cups spinach
1/2 TBSP palm oil
1/2 cup juice from pineapple
Touch of honey

nonaslob, why are you using palm oil? Is it from a sustainable source? Do you know where it comes from. I don't want to make you feel bad but over here in Australia, palm oil is widely know to be a really really really bad product. I don't know about its health implications unless its industrially produced which would make it bad but its the reason why orang-utans in south east asia are in danger. And the reason why so much rainforest has been chopped down. If you can use a cold pressed nut oil, it would be better from all perspectives.

my lunch yesterday was a curried meat pie from our local famous pie shop.
Despite all its many calories and its yumminess, it didn't sustain me for long and i had to eat 1 fig, 1 banana, and a big plate of watermelon as well when i got home.

I've been a bit slack on my vegies and salads lately.

Pattience, yes, certified sustainable and nonhydrogenated. I usually only use it on my cast iron cookware (its the abslute best) or as a substitute for shortening, but it happened to be the only good fat I had in the house when I made the smoothie. I'll be adding nuts in the future instead.
