cauliflower pizza crust?!?!

  • I just read about using cauliflower for the base in pizza crust instead of flour! has anyone else ever done this? Im really curious about how it really does taste.
  • I've mashed cauliflower with a touch of potatoes for a mashed potato substitute but I've never used it as a pizza crust. I'm really intrigued now! I hope you get an answer.
  • I haven't tried it yet, but I looked at some recipes online and am going to give it a try this coming weekend. I'll try to remember to report back!
  • I've made it!
I cook a few cups of cauliflower in the microwave (raw or frozen) then put it in a blender for a minute to make a mashed potato like consistency.
Then I add 1 egg, salt, garlic and baking powder. Make into pizza crust shape and cook at 400 for aprox 10 minutes, add toppings, and cook until cheese is melted and starting to brown.

Very low cal and low carb.

This is a good recipe (with pictures): http://yourlighterside.com/recipe-th...pizza-dough-2/
  • sounds great Vabs, thanks for the info!
  • Wow, vabs! Thanks for sharing your test kitchen results! The link with the pic look fabulous! I now MUST try it I'll pick up some cauliflower, something that I love raw or cooked!
  • I tried it once, but it wouldn't stick together. Maybe the recipe I had was not the same, but I'm willing to try this one!
  • I've heard of zucchini pizza crust.. haven't tried to myself yet, but now that I'm reminded of it maybe I'll try it soon. Probably tastes more mild than cauliflower!

there's lots of recipes for it if you google... here's one:

I'm steaming some cauliflower to mash with some potatoes and I thought I would set some aside for a cauliflower crust pizza. Most of the recipes I'm reading have a fair amount of cheese and egg in them. That makes the crust higher calorie than tortillas and flatout bread. I'm glad to read that you don't use the cheese and it works out. I'm planning to use egg whites instead as well. Is there some reason you use the baking powder?
  • Yes! I made this. It was gooooood. Only thing is you gott have parchment paper. I had forgotten to buy it so searched internet for substitute and came up with foil sprayed with pam. Uhhhh, on the heavier part of my pizza it didn't work so the corners were awesome. Could pick it up and eat like pizza, but ths center got stuck and had to be eaten with a fork.

I did load it up though: turkey pepperoni, turkey italian sausage, artichokes, mushrooms and red onions and 2% mozzarella. The whole pizza was 1100 cals. Each piece was 137. I'm sure simplifying the toppings would bring down the calories. I did make the crust with cheese and a whole egg. Then again my focus was low carb.

I'll def make this again but on the parchment paper
  • I've tried it too! Two thumbs up! This is the recipe I have used (or it's very similar): http://stickafork.net/2012/04/cauliflower-crust-pizza/
