This is an altered form of a recipe I found online. I was dubious at first, but it turned out really great! And it was an easy dish to make. I'm forever searching for ways to cook with not much effort.
Makes: 2 biggish servings or 3-4 small ones
10 tbsp lentils
1 1/4 or more cups water
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/16 teaspoon ground ginger
1/4 tablespoon soy sauce
2 chopped green onions
1/4 cup water
2 tbsp not-packed light brown sugar
Optional: a dash or two of garlic, cumin, and a teeny sprinkle of cinnamon went well with my lentils when I made them.
Total: ~300 calories
Per 2: 150
Per 4: 75
In a dutch oven or saucepan combine lentils, 1 1/4 cups water (or more as needed) and salt.
Bring to a boil.
Cover, reduce heat, and simmer for ~20-25 minutes (until slightly al dente).
Preheat oven to 350 degrees F.
In a bowl combine dry mustard, ginger, soy sauce, onions and ~1/4 cup water.
Add mix to lentils.
Sprinkle brown sugar evenly on top.
Cover and bake for ~45 minutes (until lentils are as soft as you like them.
Serve over rice/millet/barley/pita or something.
