Chicken Eggrolls
 
I found these at Walmart some time ago and they are a really good snack or meal when you wan something crunchy & salty!

They are called Confucius White Meat Chicken Egg Rolls. I'm not sure exactly, but I would guess they are about 2" long and 1" wide, generously stuffed.
Filling.


There are 120 calories in 1 egg roll, as well as:
Fat: 3.5g
Carbs: 11g
Protein: 11g
Fiber: 3g
Sugar:2g
Sodium: 370mg

Sodium may be a bit high for some but I'm okay with it.
Heat them in the toaster oven / oven for 30 minutes - flipping at 15. They get super crispy and taste so good. I dip one in about a teaspoon of soy sauce when snacking. Couple them with some nice soup for a filling meal.

Np! I forgot to mention that for my particular Walmart these are out in the big freezers on the floor, not the ones down the isles. Nearthe burritos/corn dogs/microwaveable burgers. LOL I was longingly looking in that bin for healthy fast-food like a burrito, and stumbled across these instead. They're great!

I eat these all the time! They're so satisfying. I love having them with a huge salad and a little sriracha sauce. Mmmm.

I buy high fiber/low carb tortillas (ole wellness) and put veggies, chicken, rice, salsa and cheese, wrap them, then freeze them on a sheet tray. Once they're all frozen, you can toss all of them in a gallon ziploc baggie. You can control exactly how many calories are going in it and they're delicious and save me on lazy days.

Munchy, when is your cook book coming out? You have the best inventions/dishes, etc. I love reading your posts.

Aww, thanks! I had a healthy catering business right after college, but now I just cook mostly for fun or for events for friends. I like food, so I had to find ways to eat what I like and what works for my body. :D
