I'm kind of like kaplods, I like my hot meal over a salad or greens. Mexican food tastes great over greens, but any leftovers will do, and yes I heat them up first, unless it is for instance taco leftovers, then I just make a cold taco salad.

I use fruit on my spinach. I may dice up apples, and, I've been squeezing tangerines recently.

For spinach salads I like putting on carrot slices, pear slices (OR a couple dried cranberries), and then just a small dash of blue cheese (not too much because just a little is really powerful!). Maybe even just a couple pecans or walnuts?
If you aren't using spinach (I mean you could still do this combination with spinach, I just don't know how it tastes), I like to put on my romaine some black olives, garbanzo beans, a little Parmesan cheese, onions, and I like tomatos so I put those on but, it would be good without. Both combinations are pretty flavorful and don't need salad dressing (I am not much of a salad dressing fan) |
On spinach/greens:
- Squeezed oranges (adds just enough liquid and flavor) - Juice from rethawed frozen berries + a few thawed frozen berries On Asian salads (shredded red cabbage, cilantro, cucumber, etc): - 1 tbs peanut butter, heated till melted, mixed with a tad of water - Dash of rice vinegar + soy sauce + brown sugar + lemon - Sweet chili sauce (available in bottles at the grocery store, delicious over the Asian salad I mentioned above) On Mexican/cabbage salads: - Refried beans (homemade if possible) + yogurt + lime juice + cilantro + diced onions/tomatoes (Ok, this really isn't a salad dressing, but rather a whole meal... but it's a topper that helps me eat lots of cabbage without dressing :)) |

Angie and I use flavored olive oil ALL the time for stuff. On salads a little bit goes a long way so it is very affordable for us. We love all the different flavors.

all suggestions above are fantastic! I eat a salad for lunch everyday with no meat, just a bunch of veggies, and I make my own salad dressing.
1st Version: Mix Juice from one lemon 1tsp stevia 1 avocado mashed up *most of the time i add siracha (asian chili sauce) to it, for the spice 2nd version: Juice from one lemon sprinkle of organic soy sauce 1 avocado mashed up For both versions, when you mix all ingredients it becomes a guacamole creamy consistency which covers my 2-3 cup veggie salad. I also make a Lemon, honey, ginger, soy sauce, with splash of olive oil dressing that is fantastic. I got it from Natalia Rose's Raw Food Detox Diet book, it's like crack and even my male roommate is in love with it. She says that all you need to make a salad dressing is a fat, acid, and sweetner. So far this recipe has worked for me. |
