I don't use quick oats although I think for apple crisp they'd work fine. I buy locally grown/made oatmeal and they don't do a quick oats version.
I usually make a large apple crisp (the kids love it for breakfast) but here's my guess at a 1 or 2 person serving:
cut 2 T butter into 2 T oats, 1 T whole wheat flour, 1 T dark brown sugar, plus a bit of cinnamon and a bit of nutmeg if you have them so that butter is in small pieces and it's all pretty evenly mixed together
Core and slice fairly thin 1 or 2 apples (I have one of those nifty machines that cores, peels, and slices all at the same time but if I was just doing one apple I'd do it by hand and leave the peel on (more fiber!) The apples cook down and I like my crisp with lots of apples so I'd use 2
place apple slices in bottom of oven proof dish
sprinkle butter/oat/sugar mixture on top
bake at 375 till topping is melted and bubbly golden
serve with whipped cream or ice cream (although it's great without either - when we have it for breakfast the kids certainly don't get any ice cream but sometimes i will put a squirt of whipped cream on top)
not low cal although lower calorie and healthier than the apple pan betty. Here's my guess for a 2 apple version:
