Default Need a tailgate food recipe for a contest!!

Hi all!

My workplace is having a little contest tomorrow to see who has the best tailgating recipe! The prize is 4 tickets to my boyfriend's college football team -- he would be SO excited if I could win these tickets -- they're great seats and would probably cost a few hundred dollars.

So, I have that Frank's Hot Sauce Buffalo Chicken Dip that I have made a million times, but someone else already signed up to bring it!

I have some pretty good crock pot meatballs too...

Does anywhere here have a good recipe for some awesome tailgate food that can help me win this contest?! It doesn't have to be healthy, low calorie, or ANY of that -- I won't be participating in EATING all of this tailgate food! I will be having a salad while everyone else is taste testing. I just want these tickets so bad!

Help me out, all you awesome 3FC cooks.

I have a recipe for bufalo chicken balls. Similar taste profile as the dip but these are deep fried. I dont now if you want to do something so similar, but if you want the recipe I will find it.

Here is the recipe for the buffalo chicken balls

BUFFALO CHICKEN BALLS


1 store-bought rotisserie chicken (or 1 lb of chopped chicken breast )
1/4 cup hot sauce (recommended: Frank's Red Hot)
1 teaspoon ground black pepper
1 3/4 cups sharp Cheddar
1/4 cup freshly sliced scallions
1 cup all-purpose flour
3 eggs, lightly beaten
*2 cups panko bread crumbs (recipe below)
Vegetable oil, for frying

Directions

Have oil heated to 350 degrees

Pick the meat from the rotisserie chicken and discard the skin. Chop the pieces into medium bite-size pieces.

Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and scallions, and toss to combine.

Roll the chicken into 2-ounce balls, about the size of a golf ball.

Place the flour, eggs, and breadcrumbs in 3 separate bowls.

Roll each ball in the flour, then the egg and then the breadcrumbs. Set aside on a plate to prep for the fryer.

When the oil is hot, fry the chicken balls in batches. Cook for about 2 minutes per batch.

Remove the chicken to paper towel lined plate to drain the excess oil.

If you want even more heat, zap with some cayenne~

Buffalo Turds

about 15 Jalapeno's
1 pkg cream cheese
1 pkg little smokies
1 package brown sugar bacon.

Take the jalapeno's and slice in half lengthwise and scrape out the seeds and veins. If you want it extra hot take the seeds and veins and mix into the cream cheese, but if you don't want them that hot leave the seeds & veins out.

Smear some of the cream cheese into the crevice of the jalapeno and squish one of the little smokies into the crevice with the cream cheese. Wrap each stuffed jalapeno with a half slice of bacon and secure with a toothpick.

Grill or smoke until the bacon crisp and the jalapeno is cooked.

It would be very easy to make these healthier by using lower fat cream cheese, turkey sausage and center cut bacon or turkey bacon.



Next is Thai chicken wings

Grill chicken wings like you normally would but instead of buffalo or bbq sauce use a bottle of Sweet Thai chili sauce from the asian grocery store or asian section of the grocery store. These things are lethal and you cant stop at just one.


Next is brown sugar smokies

1 pkg little smokies
1 pkg brown sugar bacon
brown sugar

Drain the juice off the smokes and mix in enough brown sugar to make it syrupy this will be your basting sauce, you can add water if you need to, I generally need about a cup or two of basting sauce.

Wrap the smokies with 1/2 slice of bacon and secure with a toothpick. Grill or bake the bacon wrapped smokies and baste every 5 minutes until the bacon is crisp and the sausage is done. These are always a huge hit.

Oh sheesh, I forgot to post it yesterday -- I WON the tickets! My boyfriend is so excited that we're going, these tickets would have been $250, definitely not in our budget!

Now I will need some low calorie tailgating food for the actual game! Maybe the buffalo turds with FF cream cheese and turkey bacon like you suggested, hpnodat.
