Pineapple Chicken Salad Roll-ups
 

I keep a stock of cooked and ready to eat chicken breast in my fridge. Every day around noon, I open up the fridge and think......hmmmmm, what shall I do with chicken today? LOL I threw today's lunch together in about 3 minutes. It was so delicious that I had to share. (Photo in my blog.)
Pineapple Chicken Salad Roll-ups
2 LaTortilla tortillas (50 calorie, high fiber, lower carb tortillas)
4 oz chicken breast
1/4 cup fresh pineapple
1/2 T dried cranberries
1/2 T pecans
1 T Greek Yogurt
Lettuce leaves and a sprinkle of salt.
325 calories
