I'm so excited to be leaving to lake Tahoe for a week for some skiing and relaxing! The only problem is that we're staying is a place with only a mini fridge and a microwave for 7 days. I'm sure we'll eat out a lot but if anyone has any genius meals I can make (healthy ones of course :-) ) I'd really appreciate it! Thanks!
Since not getting in enough vegetables is often the issue when eating away from home I have brought a microwave safe bowl, seasoning salt and then nuked veggies. Sometimes mixed in with a pouch of tuna or even a Lean Cuisine type of frozen meal. The lowest fat microwave popcorn and a container of grape tomatoes along with string cheese has saved by bacon when I needed to fill up in such a setting.
