Food preservation
 
I have assistants and things in sometimes to help me with more difficult food preparation due to being disabled. I can't peel potatoes myself and would love to know if there is a good way to store them already peeled (not prepared to eat the skins in this context) so they won't go off-colour. Or does the colour matter? Is it an actual deterioration in the food or just a colour change?

On a similar note, do people know about fruit & veg preservation bags? I like to eat bits of cut apples rather than try to eat them undoctored, as it were. I have now discovered that "green bags" allow you to cut up a load of apples and store them in the bag in the fridge ready to pull out pieces of cut apple whenever you want them. Exception is very dark red apples, as they oxidise faster than other apples. You can get a similar bag for storing bananas so you can buy a massive pack of bananas and not have them go black by the end of the week. Those are by far my best food finds.
