Default Pumpkin Souffle for one!

Found this on a blog today!

Ingredients:

•1/2 cup canned pumpkin
•2 egg whites
•1 capful of pure vanilla extract
•1/4 tsp of pumpkin pie spice
•1 packet of splenda
Directions:

Beat egg whites, vanilla, spices, and splenda in a bowl until frothy. Fold in the 1/2 cup of pumpkin. Pop in the microwave and cook for 3 minutes. Eat hot when firm.


I made it tonight for a snack: Mine was different calorie wise but heres what I used:

1/2 cup pumpkin - 50 cal

1/4 cup egg whites (liquid) - 25 cal

1/4 tsp pumpkin pie spice - 2 cal

1/2 tsp vanilla - 6 cal

Sweet N Low - 4 cal

87 cals of yum! I should have used more spice though… or sweetner. But still goooood!

could it be made with out the egg whites? I'm allergic but I've found that sometimes it ruins a recipe if you skip them.

I have no idea, I'm sorry. I think the egg is what fluffs the souflee.
