Low fat ways to flavor veggies?

  • Hello everyone,

    I'm in a mood for veggies. Lots and lots and lots of veggies.

    I usually eat them stir fried in pam or a little olive oil, but I'm getting a bit bored. I know there must be some ways of preparing veggies that I'm overlooking. I love the flavor of vegetables but just need some ways to spice them up a bit.

    Do you have any recipies for sauces or a combination of spices that you use to add flavor to your veggie meals?

    For instance, instead of butter, I often squeeze fresh lemon or lime juice over my corn on the cob or broccoli. If I cut the corn off the cob, I also coarsely chop up some white onion with the lemon. This also works with broccoli. It sounds strange, but I really love it.

    I also like baked tomatoes with a tablespoon each of mozzarella and breadcrumbs with some spices.

    Okay, enough of my rambling. I'm really needing some new veggie ideas and this is *THE* place to come.

  • My friend gave me some Mrs. Dash.... Pretty yummy on my veggies... I don't always use it, but it's good!
  • I love steamed green beans with a small amount of I Can't Believe It's Not Butter spray and sprinkled with garlic powder.

    I also love apple cider vinegar on steamed brocolli.
  • I must be boring because I think veggies are flavorful by themselves

    I often just steam veggies by themselves and eat.
  • I love my veggies too! Unfortunately I just discovered that Pam actually has propane in it! So that's out for me - I just got a Misto and put my own olive, avocado or coconut oil in it. Sea salt and black pepper work well too.

    If I'm feeling for something with lots of flavor, I sautee them with garlic, olive oil, salt n pepper, and get creative with the spices (paprika, basil, onion powder etc.)
  • I eat mine alone, too. Though I also like tossing them with fresh salsa or hot sauce.
  • I season them with Mrs. Dash and grill them.
  • At a restaurant I frequent, I get their spinach salad which has a dressing that is a fruit puree. It's like applesauce, but I think it's cranberry flavored. I normally hate salad dressing, but this applesauce type dressing was refreshing.

    I wish I had the recipe, but I bet you could Google a similar thing.
  • When I want something exciting, I think of spicy food.

    For greens and beans, I like hot sauce and vinegar. I like carrots pickled with jalapenos - spicy, crunchy and vinegary!

    To roast or grill vegetables, I like olive oil and herbs, like rosemary or thyme (depending on vegetable) and salt. I dip raw vegetables in hummus, and I had a chipotle hummus this weekend that was spicy and delicious.

    I like broccoli steamed and with just a little salt, but it's good with curry, too. You can make "creamy" curry sauce with yogurts, and I like raita to dip vegetables in as well. Indian cooking has great vegetable spicing, and if you make it at home you can control the oil.

    My favorite is a huge salad - maybe working in some raw veggies will change things up for you?

    This is definitely a noble goal, and I attribute my health and happiness to more veggies.
  • We love ours roasted. I use olive oil, garlic, cracked pepper, sea salt.......sometimes I spice them up with some curry and cinnamon.......all kinds of variences.

    sweet potatoe wedges, onions, asparagus, radish halves, are great together

    roasted cauliflower is something like NO other cauliflower you have ever had, we have to cook 2 heads to feed a family of 4! again olive oil, garlic, sea salt

    A great spice blend is something I found in a recipe on Recipezaar.com, search for Kale Slaw.....there will be a blend of spices for that salad, which is fantastic, I always make many batches of the spice blend and then use this for roasting veggies....but the slaw recipe is fantastic too!

    veggies in a burrito whith WW tortilla, low fat cottage cheese instead of cheese, veggies we like are carrot, potato, onion, peppers and corn sauted, and then lightly wilted spinach on top of that! oh, and black beans too
  • I love the taste of veggies on their own but also try to incorporate them into main entrees. Ex. Meat lasagna making for family today will have a ton more veggies than meat or cheese.

    Other tips....
    Fresh veggies - Frozen veggies taste boring
    Roasting and grilling
    Low sodium chicken broth
    Sprinkle turkey bacon
    Sprinkle nuts
    A flavor base - garlic (reg or roasted), onions, mushrooms, celery, carrots
    Drizzle aged balsamic vinegar (with/or without EVOO)
    Non-salt seasonings blends like Mrs. Dash
    Fresh herbs and spices
    Distinctive spices - to make it a specific cuisine e.g. Italian, Thai, Mexican
  • I like to steam them and then put a bit of cottage cheese on top, yum! Or I'll put on a bit of wheat free soy sauce. Or both :3. But I do have odd eating habits and a unhealthy salt habit.

    I'm making a list to file and keep on hand for when I get too bored.

    Today I had a romaine lettuce salad with strawberries, blueberries, pineapple, sliced almonds and fat free poppyseed dressing (like Panera's) and it was delish. Just a reminder for me to change things around from time to time.

    Also - canned, frozen or steamed green beans mixed with evoo, balsamic vinegar, garlic powder, & sea salt makes a quick tasty green bean salad.

    To make it a meal - add some garbonnzo beans, and onions, tool
