Default Super-Scrummy Cottage Cheese Pancakes

1/3 cup low fat Bisquick
1/2 cup low fat cottage cheese
2 egg whites
a little lemon zest if you have it

I don't know if you would want to put some sweetener in it....I like them as is.

Just mix all these together in a bowl and cook on a hot pan. I wiped the griddle with a paper towel and a little veggie oil but you could try a non-stick pan or spray or whatever you do. I had these with a 1/2 cup of blueberries and a drizzle of agave syrup. DELISH!

Can you see the cottage cheese in them? I'm wondering if I could fool my kids or if they'd notice the difference. (I'm not counting their calories or anything -- they're fine. I'm just wondering if I made these for my sake, if they'd notice? )
