I've grated them and used them as a filling for quesadillas. Grated sweet potatoes, cumin, cayenne, onion, garlic (sauteed) and a little sharp cheddar cheese to stick everything together. Topped with salsa - it's pretty great.
Oh, I always thought you just cooked and mashed the potato for that.
I love sweet potatoes, but they're not a substitute for white potatoes to me - they're their own thing. If I want a baked potato, I eat a baked potato. And if I want a roasted sweet potato, I roast a sweet potato. I'll eat both of them mashed, but with different flavorants. I love chipotle maple mashed sweet potatoes.
thanks for all the info and ideas! I picked up 2 sweet potatoes at the grocery store today, I'm going to have one tomorrow cut up and tossed with a little olive oil, italian seasonings and cauliflower fixed the same way and then roast it in the oven to go with my chicken for dinner!

I have always grated them, I like the texture! I grate them (with my food processor) and then sautee them. They really cook down and soften, but they aren't SOFT like mashed sweet potatoes.
You can also nuke them a couple minutes or so to soften them a little. It also shortens the roasting time - I wouldn't skip the roasting because I get hard/gummy texture from an entirely nuked sweet potato. But it's very helpful as a starter.
Don't forget you can also eat sweet potatoes raw. Grated up in a salad they are AWESOME!
As long as you're doing some grating, make some sweet potato hash browns as well!
I grate sweet potatoes add some egg, flour, salt pepper and fry them up like potato pancakes (you can use a tiny bit of olive oil or spray). We eat them with tofutti sour cream, hot sauce and green onion. YUM!
