Book Find
I don't know if anyone has posted this, but I just got a book called "Enlightened Cakes" by Camilla Saulsbury
I like to have my cake & eat it too, and finding lighter recipes can be difficult. I think all of the recipes are under 300 calories a serving, which can still be a lot for some of us, but I thought I'd share it for interested parties. :hb: |
I see you are in NM, as am I. Is this a high altitude baking book or do you adjust the recipes? Cakes seem to be the hardest thing to have come out at high altitudes. I just bought "Pie in the Sky" by Susan Purdy (high altitude baking book.) She has a couple of reduced fat cakes in the book that are around 240 calories per slice. I'm not sure if I want to try them though, since she substitutes corn syrup for some of the missing fat.

I don't adjust for high altitude because it never seems to make a difference when I bake, which is a lot. I only adjust baking times for items, basically I start with minimum time and then check check check. I've never had anything not turn out okay. There's got to be something you can substitute for the corn syrup in those pies. Have you looked into brown rice syrup or other natural syrup sweeteners?

Ooh, good idea! You must not live as high up as I do. Cookies and muffins don't need to be adjusted, but cakes are another story.

I've played around with applesauce or natural honey in those kinds of recipes. Turns out well.
