I am trying to find a recipe that was posted here

  • Dear chickies,

    I need your help. I saw a while ago (a month, 2 months ? I am not sure) a recipe for chicken breast posted here - it involved lining the baking dish with lots of aluminium foil and covering with aluminium foil as well. I don't recall if the breasts were marinated etc. but when done, they were nicely moist. I have to talent for drying chicken breasts to death - if anybody has this recipe or knows where I can find it, can you let me know please? I wish I could remember who posted it originally.

  • Tomato, I have a recipe for boneless chicken breasts that sounds a lot like what you're describing -- maybe they're similar? It doesn't even have a name.

    Line the bottom of your broiler pan with foil the long way, then the short way.

    Spray it with PAM.

    Put in boneless chicken breasts and roll the thin ends under.

    Pour 1/4 cup liquid over the top (could be lemon juice, chicken broth, water, etc).

    Season lightly with salt, pepper, garlic salt -- whatever you like.

    Cover the pan with foil again the long way, and again the short way so it's sealed tightly.

    Bake at 350 degrees for 60 minutes.

    You are worth your weight in gold! That was the recipe that I originally read (from MrsJim). I bought a club pack of probably 8 chicken breasts on a sale as the Best Before date is close so I need to make them tonight.
    Thanks so much again, this will be great for experimenting with different flavours. For today, I think I will try garlic and some ginger as I think I may have a little piece of ginger sitting in the fridge.
