Barbara,

I wanted to thank you again for those recipes. The crustless quiche is now a staple of my diet and I've won over lots of non-veggie loving friends in the last week. I've been putting 4 oz of chedder in the bottom of a 9 inch pie pan and then cooking up spinich and whatever veggies are fresh that day - red peppers, broccoli, some mushrooms, onions, garlic - and making a thick layer of veggies over the cheese. Then pouring the eggs and non-fat evaporated milk over top. The cheese adds about 110 calories per serving plus saturated fat but it also adds a lot of flavor. This is now my current favorite food! Thank you so much for posting that recipe. I never would have thought of the non-fat evaporated milk and that's really the secret to the success of this dish!
