I would really like to incorporate tofu in my diet and I'm looking for a great recipe.... I'm open to any ideas/suggestions :)

Personally, I really enjoy some of the pre-marinated tofu that you find at Whole Food, Trader Joe, and sometimes the regular grocery stores... It's about 90 calories for a serving, it's really tasty, and you can eat it cold or hot, by itself or mixed into a salad, over pasta or rice, etc., there are all kinds of options! I find it to be a terrific source of protein and really quick and easy.

Tofu, to me, really doesn't have much of a flavor, but I love it anyway in soups and stir-frys. I don't know why, really. I just like the light and fluffy texture of it when it's cooked right. So maybe buy some firm tofu (the mushier stuff doesn't work well in a stir-fry) and try it that way. Stir-fry it up with some veggies :)

I love these tofu recipes from Cooking Light:
- Ground Turkey and Tofu (I used carrots instead of peas, since I'm not a fan of peas, and also added some diced red bell pepper).
- Spicy Stir-Fried Tofu with Snow Peas, Peanut Butter, and Mushrooms (I used button mushrooms instead of ****akes).

I also like to take light, extra-firm tofu, slice it into 8 slices per cube, press the water out, marinate it in teriyaki sauce, then bake it at 350 until it is browned (line the pan with aluminum foil or you'll never get it clean). It makes a great, low calorie snack. It does smell really bad while it is baking though.

I cut firm tofu up and fry it in a pan with seasoning for taco meat, just like you would with ground beef and then we have tacos! I don't know how good for you the taco seasoning is, I never really looked because I just started the "lose weight" thing.

Tofu smoothies are good too.
