Aha, you're right! Zenor mentioned using the whey in baking in place of buttermilk. So...do you add it as part of the liquid in a recipe that doesn't call for buttermilk? What a cool idea!

I made four loaves ww bread today. I added 1/4 cup gluten,1/2 cup soy flour, 1/2 cup powdered skim milk and about 1/4 cup ground flax seed to the flour. I also used about 2 tablespoons cooking molasses which isn't very sweet (I don't like a sweet ww bread unless I've added raisins). The bread is delicious and I'd eat a whole loaf if I didn't restrain myself!

I made a couple more loaves yesterday. I used the same recipe I started with, but used the dough cycle and formed the loaves by hand. When you freeze your bread, do you slice it first? |
I usually freeze the loaf whole but I have frozen sliced loaves, especially if I only want to take out one slice at a time. There are four of us at home and a loaf of bread doesn't last long. I usually take out a frozen loaf and microwave it if I need it right away. If I wasn't so lazy I'd slice all the bread first because it's so convenient that way.

I make bread too, using the dough cycle on my machine if I only want one loaf, which since there are only 2 of us is usually plenty. If I know I'm going to be busy for awhile, I'll make two loaves, and I do those by hand. I'm loving all the ideas of things to add!

So, Isabella, when you freeze the sliced loaf do you separate the slices with anything? Do they just sort of peel apart when you want one? I am the only one eating this homemade bread and I figured out rather quickly that I am going to eat too much of it if I don't package it in some way.
My recipe makes one huge loaf in the machine. This time I divided the dough into two parts and made two smaller loaves. It worked just fine. Next time I am going to add some more stuff. |
The bread kind of sticks together, especially if it was warm when it was bagged. I can usually pry a piece off the frozen loaf without too much bother. If it sits out for a few minutes of course it's easier and the whole loaf is still quite frozen so it can go back in the freezer. I make smaller loaves, too. Everything seems to fit better on a smaller slice and it fits in the toaster better too.
How does your family resist the aroma of fresh, homemade bread? I am considering putting yogurt in my next batch to see how that turns out. From what I'm reading it makes the dough and crust nice and soft. I'll let you all know how that turns out, but it probably won't be until the week end or so when we get this bread eaten. |
My DH likes to eat bread hot out of the oven, but after it cools, he isn't interested. I thought he would like this new recipe because it is nice and soft and doesn't seem to be so crumbly as some I have made, but he really prefers his Roman Meal.
Do let us know how the yogurt works. I have lots of yogurt.....:lol: |
