You can store them in the freezer and either thaw them or use frozen. I use them frozen straight out of the freezer and have never had any problems. The first time I bought them, I found the ww ones on a soon to expire sales rack. That's why I originally threw them in the freezer.

I figure I will look in the bread crumb aisle and if I don't have any luck there, I would hit the ethnic food aisle. It's gotta be somewhere!! That will be my grocery store adventure for next week. There is always something I am running around looking for at the last minute!

I love tempura but avoid it because it is breaded and fried. I'm now thinking that I'm going to get my tempura fix by using my Eggbeaters, panko and baking. Since boobalah is out of town for a few days, I'm getting my seafood fix in for myself.

I found my Panko in a large, independent grocery store that carries a lot of ethnic foods. I finally opened my little package today.

I made boneless, skinless chicken breast stuffed with apricot, almonds and a bit of goat cheese. I egged it, Panko-ed it, and grilled it. The panko was really nice and cripy and stuck so nicely to the chicken breast. Makes the whole deal much easier than with other crumbs and I used a very small amount.

I made my tempura. I was looking for the brown to start on top. It doesn't. I overcooked my zukes. However, they were good.

The scallops were fantastic!

I got mine in an asian grocery store... it was not by the bread crumbs, I forget which section I found it in. Ask the people who work there if its in another section of the store. Strange I know.... the bread crumb section is the first place any one would look.

One of my grocery stores carries Panko near their baking chocolate. They also have it in their 'specialty' food section.

I remember seeing it at the asian grocery store too but can't remember where. Whole Foods carries it but again I think it was somewhere other than near other bread crumbs.

On an out-of-state trip I found a Trader Joe's store, and found Panko. Now...what do I do with it?

I use it like a breading. So far, I've used it for chicken parmesan and zucchini. It's crunchier than bread crumbs and has an interesting texture.

I never thought of baking with panko... I'm gonna have to pick some of that up soon! Seriously, you guys have me so excited here, lol.

My husband loves fried fish (I could never stand it, fish is oily enough!) but I bet he'd like it baked with panko, too. Although the eggplant sounds excellent as well... I could make an "eggplant parmesan" type thing... yum.

I'm making a trip to the local natural foods store on Monday (for lip gloss, of all things) so I'll see if they have the whole-wheat kind. That would be great!
