We just got back from a Costco/Trader Joe's run. I got a little package of Trader Joe's Chevre Lite. It is 35 cal per ounce, as opposed to 70 cal per ounce in regular goat cheese, and half the fat. It doesn't have any unidentifyable ingredients. I opened it and had a teaspoonful. Oh, my! Really, really good. I think this goat cheese will be one of those things that makes life worth living:lol:.

When I lived closer to a TJ's I would buy the lite chevre all the time! It makes really good quesadillas with corn tortillas. Yum! Too bad the closest TJ's is two hours away...

I love goat cheese. My fave way to eat it is to chop some fresh garlic and parsley and mix it with the goat cheese. Then I eat it on lite toast with chopped tomatoes. YUM. I didn't know there was a light version though. Thanks for the tip!

Goat cheese is not my favorite, but I find it one of the most wonderful additions to salad. It goes really well with balsamic vinaigrettes and reductions. One of my fave salads is mixed greens, goat cheese, nuts and blackberries. I use frozen blackberries sometimes and it works fine because the chevre soaks up all the berry goodness.

I split a pita, topped it with a bit of tomato paste, a thin piece of deli ham, carmelized onions, crumbled goat cheese and a sprig of fresh rosemary. Put it in the toaster oven at 400° for a few minutes.:drool:

I love love love TJ's lite chevre! :love: I don't care what kind of cheese a recipe calls for--I use the lite chevre. I've used it in casseroles (both Italian and Mexican), egg dishes, and even in tacos. I also eat it on sandwiches, do the pita thing that gail mentions (with TJ's whole wheat, 130-calorie pitas), and eat it in salads (my favorite is spinach with roasted peppers, chicken, figs, fennel, roasted garlic, lite chevre, and balsamic vinegar). For a while, my Trader Joe's didn't stock it and I thought I was going to starve.

I also love the cute little goat on the package!
