How to roast sugar pumpkin?

  • I bought a couple of sugar pumpkins and read somewhere that you can roast them. Does anyone have a recipe?
  • Slice in half from top to bottom, cutting the stem in half. Scrape out seeds, place cut-side-down on a cookie sheet sprayed with PAM. Bake at 375 until tender, about 45 min (or less if pumpkin is on the small side). You can then easily peel off the skin. I like to add my mashed roasted pumpkin to some chicken broth and spices like sage and chili powder, making yummy pumpkin soup.
