Squash
 
So I went to the store last night and decided to be a little adventerous and got a butternut squash and an acorn squash (plus they were on sale for cheap). I've never prepared them before so I'm looking for some suggestions.

try puting them in a pan with a little olive oil and some green onions, sprinkle with a tad of garlic salt. YUMMY!
Have fun with them. Squash is my favorite veggie.

Butternut and acorn are two of my favorite squashes. I'm a winter squash fanatic. I bought some butternut squash just today and I also have a carnival squash I need to eat.

I prefer this type of squash a little on the sweet side instead of with salt.

My favorite way to cook butternut and/or acorn is to cut it in half. Then I scoop out the seeds and put the halves into a baking dish (skin side down) and spritz the halves with butter spray, then I sprinkle on a little bit of brown sugar, especially down into the wells where the seeds used to be. Then I cover it with foil and bake it at about 375 for an hour to an hour and a half, depending on how long it takes for the squash to become nice and soft. Then I scoop it out of the shells and plop it onto a plate and go to town!

I love butternut squash roasted with a little brown sugar as well. I saw a recipe for acorn squash that was roasted then topped with a maple syrup and orange juice glaze after it was done cooking. Looked good but I have yet to try it. The acorn squash was just cut into slices{rings}and roasted in the oven.

I LOVE acorn squash. It's one of my new favorites.

I cut it open, scoop out the seeds, place in a baking dish with a little water. I sprinkle it with a little splenda and lots and LOTS of cinnamon. I cover it and bake at 400 degrees til soft, maybe an hour. YUMMY. It's so healthy too. 83 calories per cup, a whopping 8 gms of fiber. It's got iron, calcium and vitamins A & C too. GREAT STUFF.
