Fab Salad for a Snack
I found the most fantastic salad recipe today that I just had to share:
Yogurt Vegetable Salad 1/4 cup nonfat plain yogurt (I used Trader Joe's Greek-style) 1/4 cup garbanzo beans, rinsed and drained 2.5 oz diced cucumber (about one pickling-sized cucumber) 1.5 oz cherry tomatoes (about 4-6), halved 5-10 leaves of fresh basil, minced (you can also use mint) 1-2 tsp dijon mustard Salt and pepper to taste Mix it all up and eat it. This makes one generous serving (good for a snack) and it comes to about 85 calories. To make it a little more substantial, I added 1/2 fillet of BumbleBee Meskite Grilled Tuna, which increased the calories to 160. It tasted like summer! |

That looks really good! We're still able to get these really delicious orange cherry tomatoes at the farmer's market and I like them but can never use them all up. This looks like an excellent vehicle for them.

I'm definitely trying this in the summer - the tomatoes here at the moment are absolutely foul and too expensive to even consider buying.
