A Stroke of Genius: Egg Whites

My bf made an excellent discovery that I thought I'd share with you. He wanted to make egg salad for his lunch with several whites and only one yolk. We buy the free range organic feed happy farm eggs and are loathe to waste them by tossing the yolks, so we buy 100% egg whites as well, and mix them with the whole eggs as we need them. Anyway, the problem with boiled eggs for snacks or salad is that you have to throw away the yolks and eat only the whites, but not anymore! He poured his egg beater whites into a small jar with the lid loosely on top and boiled the jar for a couple of minutes less than it takes to boil an entire egg. Voila! They're exactly the same as regular boiled egg whites, except jar shaped and less wasteful. Hooray!
