My bf made an excellent discovery that I thought I'd share with you. He wanted to make egg salad for his lunch with several whites and only one yolk. We buy the free range organic feed happy farm eggs and are loathe to waste them by tossing the yolks, so we buy 100% egg whites as well, and mix them with the whole eggs as we need them. Anyway, the problem with boiled eggs for snacks or salad is that you have to throw away the yolks and eat only the whites, but not anymore! He poured his egg beater whites into a small jar with the lid loosely on top and boiled the jar for a couple of minutes less than it takes to boil an entire egg. Voila! They're exactly the same as regular boiled egg whites, except jar shaped and less wasteful. Hooray!

I usually throw the yolks away because buying egg whites or egg beaters or other egg white egg substitues are so much more expensive than buying the whole eggs and dumping the yolk. So it seems like I either have to waste the yolk or waste money.

We live in an area with a lot of wildlife, and a freind suggested I leave out the boiled yolks for critters, but I'm never sure if this is environmentally a good idea or not, not to mention I don't want to attract feral cats and dogs, or critters like raccoons and skunks that might also get into the garbage and strew it about looking for goodies.

Yeah, either way, it's expensive, but I don't like to be wasteful. I eat tons of whites and only a few whole eggs, so I reckon its worth it to buy the whites and the free range happy chicken eggs. It could be worse: we could be spending that $6-8 a week on snicker's bars and McDonald's.

Okay is it totally wrong that I imediately pictured using cookie cutters to cut out egg white shapes out of an egg white block?

Yeah I'm an odd cookie.. I blame the artist gene!

Anyway, thanks for the tip I'll keep it in mind. I like hard boiled eggs and hate yolks and rarely feel like doing the whole boiling thing.

You can put the cooked egg yolks out for the birds to eat. Mix a little birdseed with it, to catch the birds' attention. The protein is actually great for the birds (when you think about, the yolk is what nourishes an unhatched baby bird). This is especially great to do in the winter, when birds have very limited sources of protein.

What a great idea! I thought of doing something like this, but just never came up w/the jar idea
