What can I do with frozen peppers?
I bought a bag of frozen mixed pepper strips, but don't know what I can do with them (I'm used to eating fresh peppers). I'm concerned that if I use them in a stir-fry recipe, they'll turn out mushy (I like my veggies on the crisp side).

Does anyone have any good recipes? Perhaps a spread?

Throw them into soups, hummus, make a tapanade with them and some sundried tomatoes/olives, puree them to make a sauce for croquettes or a pilaf, add them to a pan of roasted veggies 15 minutes before the other veggies are done, use them in a stir fry, chop them and stir them into a rice/couscous/quinoa dish...oh, I could go on! :lol:

My favorite way to use frozen peppers is to stir fry them up with some onions and throw them on a prepared salad and use FF sour cream and salsa mixed together as a dressing and you have a southwest salad! You could even add a few slices of avacado or some Vegetarian Refried beans or refried black beans. ANYTHING! :)

If you are worried about them getting mushy try thawing them under cold water first in a colander then shaking out the excess water.

I would mix them with some eggbeaters for an omlete. Add a little salsa and presto and super breakfast or dinner

I like to add them to my favorite chili recipe:

Veggie Beef Chili
Serving Size : 6 HUGE portions!!!!
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
5 Cloves Garlic -- minced fine
1 Pound Ground Beef, Extra Lean
1 Large Onion -- diced small
2 Packets Chili Seasoning Mix
3 Whole Zucchini Slices -- diced small
2 Whole Bell Pepper -- diced small *here's where you can use frozen too!
2 Cans Tomatoes With Green Chilies -- drained
3 Cans Kidney Beans, Canned -- drained
1 Can Tomato Sauce
1/4 Cup Masa Corn Flour

Saute the garlic, onions, and beef until cooked through in a large pot. Add chili seasoning packets and remaining veggies. Cook for about 15 minutes. When veggies have cooked down a little, then add the tomato sauce & masa. When thickened serve! Great with some diced onions, a sprinkle of cheese and some sour cream

I grow lots of peppers in the summer and chop them and freeze them in glass jars. They are wonderful in stir frys and casseroles and I even throw them right on salad. No one hardly notices they were frozen. I do chop them instead of slicing them. Green peppers become red if you let them grow long enough. Red peppers are so expensive to buy that I feel like it is really worth it to freeze them.

I make fajitas! A low carb wrap, some fajita seasoning, frozen peppers and oinions, chicken breast, salsa, and YUM!
