Anyone tried this fat free cocoa cake recipe?

  • I haven't, but it looks like it should work.

    I make this chocolate-zucchini bread all the time, even when I'm not actively trying to lose weight. It's delish.

    Made with 1/2 sugar and 1/2 splenda, it's 114 calories per slice; made with all sugar, it's 144 calories per slice. And it contains chocolate chips! The texture is better with all sugar, but it's pretty darn good either way.

    Chocolate Zucchini Bread

    1 1/2 cups all-purpose flour (or sub 1/2 cup of w.w. flour for extra fiber)
    5tbs unsweetened cocoa powder
    1 tsp cinnamon
    ½ tsp baking soda
    ¼ tsp baking powder
    ½ tsp salt
    ½ cup white sugar
    ½ cup splenda (or more white sugar)
    1 egg
    ½ cup applesauce
    1 tsp vanilla extract
    1 cup shredded zucchini
    ¼ cup semisweet chocolate chips

    Preheat oven to 350 degrees. Lightly grease a 9x5 inch loaf pan.

    In a large bowl, combine flour, cocoa, cinnamon, baking soda, baking power and salt; mix well. In a separate bowl, combine sugar, splenda and egg, and beat until well blended. Add the applesauce and vanilla. Stir in the zucchini and then add the dry ingredients. Mix until just moistened. Stir in the chocolate chips and spoon the mixture into the loaf pan.

    Bake in preheated over for 50-60 minutes, or until a toothpick comes out clean.

    The calories above are based on cutting the bread into 13 slices. I like to eat it warm spread with just a little Brummel margarine. It's delicious!
