Well I did the marketing today and got everything I need for phase one. I start tomorrow! DH is doing this with me and DD (10) wants to get in on the action too! While I don't normally go for putting kids on diets (unless there is a very good reason) I do want her to learn about healthy eating and food choices. She is 4'9 and weighs 104 lbs. so she's not considerably overweight but she does like the junk food. So I want her to learn now so that she doesn't end up like me (with the weight and health problems) later in life. I took my "before" pictures and we are about to take DH's pics. We'll weigh in tomorrow morning for the official starting weight. I am actually very excited! Also a little nervous. I don't really have a really good handle on cooking veggies so this'll be interesting. Also does anyone have any good recipes for tofu for P1? I've never even tasted tofu, but I am feeling adventerous and bought some. Well wish me luck.... here I go!
Tofu doesn't really have taste but, it's a good source of protien. Some people deep fry it but, that's not good for us right now. The thing about tofu it picks up the taste of what ever your cooking with it. I buy firm, slice it, and put it in a stir fry with fresh veggies and garlic and ginger. I don't love it but it's ok and sometimes I mix in scrambeled egg beaters.
