Whenever it calls for brown rice and vegetables in the same meal, I add in some soy sauce, crushed red chili flakes and chopped garlic for flavor.
For the garbanzo beans, I add indian chana masala (comes in a box at major grocery stores or indian grocery), spicy ketchup and fry some onions in cooking spray.
I also make a salad of chopped cucumbers, tomatoes, cilantro, lemon juice and a dash of splenda, salt and chili powder.
first meal
1/4 cup of oatmeal (i use like 2tbsp's of nonfat milk in addition to the 1/2 cup of water)
or
1 cup of cornflakes with 1/2 cup of nonfat milk
second meal
4 egg whites (hard boiled eggs)
or
1/2 cup of brown rice, 1/4 - 1/2 cup of beans(black or garbanzo beans), 1/2 cup of steamed veggies
third meal
4 egg whites (hard boiled eggs if i didnt have them at my second meal)
or
1/2 cup of brown rice, 1/4 - 1/2 cup of beans(black or garbanzo beans), 1/2 cup of steamed veggies
4th meal
1/2 cup of brown rice, 4 egg whites made on the pan with 1 tbsp of extra virgin olive oil (given that i did not have the egg whites earlier in the day)
or
1/4 - 1/2 of beans(black or garbanzo beans), 1/2 cup of steamed veggies
5th meal (if i am hungry or after my work out if it is a late work out)
banana smoothie - made with 1 cup of nonfat milk, 2 tbsp of nonfat nonflavored yogurt, 1 banana, sometimes a little cinnamon
I don't think my daily menu will help adding any excitement to your diet because I mainly eat oatmeal, yogurt, fruit and veggie soup! But I have perfected fried rice for dinner! I take 2 cups of brown rice that I made the day before, heat it up in the microwave with chopped frozen onions and frozen peas and carrots. Meanwhile, either "fry" up some tofu or scramble some eggs. Add the rice and flip around for a few minutes until it's all heated. I add a touch of soy sauce. I made this last night and added a veggie burger - it was pretty good!
My main menu consists of oatmeal, yogurt, fruits and veggies as well... For dinner...i usually eat brown rice with some veggies. But last week i made stuffed green peppers (look in the recipes section for the list) and it was soo yummy! Even my fiance's parents loved it!
Mornings I either have oatmeal with cinnamon, a fruit smootie (made with vanilla soymilk ,lowfat yogurt and frozen fruit, or a fruit salad and a cup of herbal tea.
Morning Snack: is usually yogurt or hommade applesauce
Lunch: consists of leftovers from what I made for dinner (unless it was bkfast for dinner)
Afternoon Snack: carrot sticks or 2 rice cakes (made from brown rice)
Dinner: Can be anything from veggie stirfry, rice and beans (with some morningstar veggie meat crumbles), stuffed green peppers, eggwhite omlet with peppers, mushrooms, garlic and onion and morningstarr sausage.
