Sweet Potatoes?

  • Can someone please tell me, do you peel them, or can you eat the skins like white potatoes?

I'm planning on some sweet potato fries tomorrow!! They sound YUMMY!

    Thanks
  • Well, I'm not expert but I would take a look at this site. http://www.whfoods.com/genpage.php?t...dspice&dbid=64 It says that unless they're organic, it's safer to peel because the skin can be coated with wax?

I've never heard of that but I normally peel them just because the skin is a bit thick and bumpy and I find it easier to make sure they're clean. I imagine, like with other potatoes, the fiber is in the skin, but I do peel them.

I also make sweet potato fries sometimes. I peel them and cut them in fries or cubes (both can be difficult, you need a good peeler and a strong knife). I put parchment paper on a cookie sheet, dump on the sweet potatoes and spray a little bit of Pam and then whatever spices you want. I like them plain or with a tiny bit of salt. That's it. Bake them at 400 or 425 until they get a bit brown. I find they don't get crunchy like regular potatoes but they are soooo yummy and healthy!

    Enjoy!
  • Thanks!
Thanks Elisa for getting back to me!

I'm planning on having a go at them tonight with onions and peppers!! Really looking forward to it!

The cinema/KFC trip last night went fine, and I'm very proud of myself! I had a water at KFC, and had a huge fruit salad with me to munch on during the movie!!

And to make it even better, I lost another pound this morning!! Usually after a kfc/cinema night out I gain 3 or 4 pounds!!

    Plan for today

    Smoothe (with protein powder)
    Porridge & lf yoghurt
    Cherries
    Smoothie (with protein powder)
Sweet potatoes (baked) then stir fried with onions and peppers
    Apple

Really enjoying FS so far and not feeling even vaguely deprived!! If the weight loss keeps up steadily, I'll probably go longer than the 9 days - although I will allow a few extra on Christmas Day (turkey, 2 x wine and sf dessert - but that is all!)
  • I like the skins ok, When you go to Lonestar Steak House they always serve a backed sweet potato instead of white and the skin is always yummy there, but then they do coat it in butter.............mmmmmmm........... oops scratch that..
