Chili (phase 1 and 2)
 
I made this today because I craved something spicy and filling hehe. you can change it to fit both phase 1 and 2 it's very simple, but tastes great :carrot:

I made this for myself but ended up getting about 4 servings from it. I didn't measure much, just added to taste (being that everything in it was unlimited amount of veggies ^_^) you'll have to add or take away what you don't care much for.

I used.
1 cup black beans, cooked, drained
1/4 white onion, chopped
1/2 cup whole kernel corn
1/4 bell pepper (any color), chopped
1/2 tomato, chopped
4 mushrooms, chopped
3 Tablespoons chopped green chili (I used caned green chili, mild)
tsp olive oil

For Phase 1 people, I added 1/2 cup cube extra firm tofu.
For Phase 2 people, you can use a serving of cooked AND drained lean ground Beef or Turkey

For flavor I used:
tsp of Curry powder
tsp of Cayenne powder
tsp of paprika
tsp of garlic powder
tsp low sodium soy sause
tsp tobasco sause
salt and peper to taste

I used a bit of the above spices to marinate the tofu in for 4 hours

Sautee` (spelling bad ^_^) the veggies in a bit of olive oil until tender, then add this to the black beans. cook tofu in left over olive oil until brown and add this to the mix. Then add all the spices and stir.

Simple easy (and spicy) chilli. most any vegtable can be used. For a slightly sweeter chilli, try adding a bit of honey to the mix.

For phase 2, you can put a bit of shreded cheese on top before serving ^_^
