fresh salsa

  • ok so i was thinking about this the other day and decided to make some fresh salsa...never made it...never thought about it until i realized that salsa is pretty much vegetables....soooo i googled "how to make salsa"...and found a step by step guide...im not much of a cook so i need to follow these types of instructions......it is GREAT!!!!!!!!....lord knows i made a complete mess in my kitchen ....but damn this stuff tastes great...i may have put a little too many onions and maybe a little too much of the jalapenos but nothing the brown rice and black beans cant mask...and it goes GREAT with brown rice and black beans...heres the link

    i didnt use any salt...i did use lime juice although im guessing lime juice is ok?....

    A little lime juice for flavor and/or acidity is fine. Just don't drink a glass of it

    yea the step by step instructions and photos are GREAT....for someone new around the kitchen like me...it worked wonders....although i will say again...i made a mess...maybe im just not used to all these ingredients...but damn the cleanup sucked...lol...but it tasted GREATTTTTTTTTTTT...
  • For a little less work and cleanup, you can put all of the ingredients in a food processor (or blender, I suppose), and whiz away. It's a little harder to get the exact chunkiness you want, so you might end up with a little smoother, or chunkier salsa than you intended, at least until you've done it a few times, but it still tastes as good. Also, during winter when the fresh tomatoes aren't so tastey, you can use a can of finely diced tomatoes or tomatoes with chiles as your base, and add the other fresh ingredients. It's not as fresh tasting as fresh, but it's an improvement over jarred salsas.
  • I make home made salso all the time, it is so quick and easy. I have a hand chopper, use fresh but firm tomatos, jalepenos, and peppers, and of course onion. I will use red, green or any color peppers. I dont' add lime juice, but use garlic and cilantro. My DH likes his runnier than I do, so I put it in a blender for him. I like it chunkier, but small chunks and hot hot hot!
  • so i figured something out today...you can use the fresh salsa for practically ANYTHING....in the morning...i did the following (and i think these are called huevo rancheros?)...

    1 tbsp of olive oil in a pan until it heats up enough....2 tbsp's of fresh salsa into the pan to sautee it a little bit....then toss 4 egg whites into the pan to mix in with the salsa...you can make it "scrambled" or an omelette if youd like...GREAT taste to the egg whites..i was very impressed...


    for tomorrow's lunch...and since phase 3 starts for me tomorrow i can use whole wheat whole grain pasta...sooo i made some today for tomorrow...i used 1 garlic clove chopped up as much as i can....some basil...some cilantro...boiled the water and tossed the whole wheat whole grain pasta in there to cook....

    later today once my chicken thaws out...i will bake the chicken with chopped up garlic and onions i had left over from yesterday...i might throw a little basil on it too....

    so for tomorrows lunch...i will use 1 cup of the whole wheat pasta...approx 4oz of the backed chicken (chopped up)...and about 3 tbsp's of the fresh salsa....i think it will be a GREAT meal...

    the best thing is...i havent really veered tooooo far away from my regular meals...aside from tossing in the whole wheat pasta and the chicken (i do chicken or broiled sirloin steak maybe once a week)...the pasta will only be once or twice a week...so im not really added MORE calories...ive stayed more or less the same...
  • I use a little cumin (1/2 teaspoon or so) when I make my salsa. It gives it a flavor much like Chili's.
    Thanks for the recipe, I was starting to get a little tired of the same brown rice and beans.

  • not a problem!!!....i was gettin a little tired of the brown rice and beans as well...after about 30+ days....it needed a little flavor...im surprised i lasted that long honestly...lol
