Mexican eggs (Huevos a la mexicana) Phase 2

  • This is the simplest recipe ever, but it's good. They are called "huevos a la mexicana" because they have the three colors of the Mexican flag (green, white & red), ie jalapeņo/serrano, onion & tomato.

    4 egg whites/1 whole egg (beaten)
    1/2 Roma tomato (diced)
    1 large slice white onion (diced)
    1/2 jalapeņo [use serrano if you like it spicy] (diced)
    Cilantro (for garnish)
    1 tbsp Extra Virgin Olive Oil

    I add a little Krazy salt (salt, pepper, garlic powder, etc) to the eggs before beating. Fry up the onion and jalapeņo/serrano until the onion starts turning light brown. Add tomatoes but don't leave them too long before adding the eggs. Garnish with a sprig of cilantro.
