I have switched whole wheat flour for white flour a long time ago but I never just make the switch in a recipe. I went scouring All Recipes website this morning for breakfast ideas and found a very easy simple whole wheat blueberry pancakes.
* 2-1/2 cups whole wheat flour
* 1 tablespoon and 1 teaspoon baking powder
* 2 egg
* 2 cups milk, plus more if necessary
* 1 teaspoon salt
* 2 tablespoons artificial sweetener
* 1 cup blueberries

DIRECTIONS
This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 10 pancakes.
1. Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
2. Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.

You may need to use more milk than 1 cup. The batter should be thin enough so that it pours, but not so thin that it's runny. We find that 1/4 cup additional milk is about the maximum needed.
1 mistake I made was i only used 2 cups flour, so I didnt need extra milk. i also used skim milk. this makes 10 servings and is about 140cals I think. they were wonderful, although my blueberries were very tart. I think next time I will do banana and nut and i think I would like to add some flaxseed.
Now, for my new snack. I take some frozen fruit(blueberries, peaches or strawberries) slice the ones I need to and put them in the bottom of a small glass, add 1/2 cup low fat plain yogurt on top with a packet of splenda then sprinkle a 1/3 cup of All Bran Bran buds. It is SO yummy. It's sweety, crunchy and filling.
