Cardio/Weight training -- not enough variety?

I recently started doing the Couch to 5K running program, and am using that as my cardio workout, but I always feel a little lost...

Should I be varying my workouts more? I try to get to the gym at least 3 times a week (it depends on my work schedule), and I also take at least 2, 2-hour dance classes (one jazz, one ballet) on top of that. I also usually try to get in some weight machines while I'm at the gym.

On top of the working out, I'm a waitress and work 5-6 days a week, sometimes 10 or more hours, so I do A LOT of walking while I'm at work.

This seems so general, but is this enough physical activity to be losing weight? My clothes are fitting looser and people are saying that I'm looking better, I just really want to be able to keep it up.

Thanks in advance!!

I've definitely changed my eating habits. It's not that I'm on any "diet" specifically or anything else, I just really try to get a feel for what my body's saying before I eat. That is, I take about 5 minutes to really THINK about what I'm going to eat and why I want to eat it. (Am I eating because I'm hungry? Or bored? Or even just thirsty?) And I try to eat ONLY when I am hungry, and I try to only eat good things for my body.

I've tried food journals, calorie counting, etc., before but it hasn't really worked for me. Really just being more conscious about everything that's going on is how I'm going at it.
