Crabcakes

  • 12 ounces lump crab meat
    1.5 ounces minced onion
    1.5 ounces minced red pepper
    3 tbs vegetable oil
    1/2 c. mayonnaise
    1/2-1 c. low carb bread crumbs (I used a low carb roll, toasted, then ground. It came out to 3 grams)
    1/2 tsp. Old Bay Seasoning
    3 tbs. parley, chopped

    Heat 1 tbs oil in large skillet over medium heat. Cook bell pepper and onion for 3 minutes till softened. Transfer to a bowl. Add crab meat, 2 tbs bread crumbs (can add a bit more), mayonnaise, parsley, and Old Bay. Mix till combinded. Cover and refrigerate for 20 minutes.

    Using 1/3 c. measure make 6 crabcakes. Coat with remaining bread crumbs. Heat remaining oil in skillet over medium heat. Cook crabcakes until golden brown on both sides.
