1 lb ground beef 1 very small onion, chopped (I was told red onions have lowest carbs) 1 cup finely shredded carrots (about 2 carrots) 3 cups finely shredded cabbage (about 1/2 head) 1 tsp salt pepper 16 oz spaghetti sauce (Ragu Rubsto is among the lowest in carbs-check labels) 1 tbsp worcestshire sauce 1/2 cup shred. cheddar cheese Brown ground beef and onion, drain._ In 2-qt. casserole dish layer carrots and half the cabbage._ Sprinkle with salt pepper._ Add meat mixture press down._ Add remaining cabbage._ To spaghetti sauce add worcestershire sauce. Pour over top of casserole._ Cover._ Bake at 350 for 55 minutes._ Add cheese on top._ Bake uncovered 5 minutes. If every carb counts for you, adjust the recipe to fit your WOL._ You can do this by using less onion and less spaghetti sauce. |

Ground Meat and Cabbage
(serves 6) 1 pound extra-lean ground beef, turkey or chicken (turkey and chicken require some oil in the pan to brown) 1 medium onion, diced 1/4 or more teaspoon garlic powder (to taste) 1/2 head cabbage (about 3 cups coarsely shredded) 3-5 carrots, shredded (optional) 1 bouillon cube 1/2 cup water 1/2 teaspoon salt (if desired) 1/4 teaspoon pepper 1/2 teaspoon caraway seeds Optional:_ May be covered with thinly sliced tomatoes and shredded or sliced cheese in last 15 minutes of baking for a topping. Combine the ground meat, onion and garlic powder in a 2 qt. covered oven casserole/pan. Saute uncovered for about 15 minutes, stirring occasionally to break up the meat mixture. Drain off any fat.__ Add the cabbage and remaining ingredieints; toss well. Cover the casserole and bake at 350 for 1 hour._ If desired, remove cover during last 15 minutes, top with sliced tomatoes and shredded or sliced cheese and return to oven for balance of baking time. |

Heat oil and butter in large, heavy skillet. Add ground beef and cook, stirring, until browned and crumbly. Drain. Add onion and cook until tender but not browned. Stir in basil, marjoram, oregano, salt and pepper. Stir in drained spinach and cook until liquid in spinach has evaporated. Beat eggs, add to meat mixture and cook, stirring, until eggs are set. Yield: 4 servings |
