Default New Cookbook

Hi! Found a cookbook that has low carb recipes and is written by an RN who lost over 107 lbs. Can I put some of those recipes here, or the name of the cookbook for others to get?

Default About New Cookbook

I wasn't certain if I could put the name of the cookbook here. It's called "Eat Yourself Thin Low Carb Cookbook by Nancy Moshier, RN. from Minnesota. She lost 129 lbs. By going to her web site, I noticed she also has another book on desserts only.

Default Nancy's Ketchup Recipe

I haven't tried this recipe from the book yet, but it sounds good.

Nancy's Ketchup
1 - 6 oz cans tomatoe paste
4 Tbls. white vinegar
6 T. Splenda (she does say Sugar Twin..I changed that)
1 tsp. garlic powder
1 tsp. onion juice (McCormick Brand)
1/8 tsp allspice
1/8 tsp. salt
2 1/2 Cup water
Mix all in small saucepan and heat over low heat 15 min. to blend flavors. Chill and store in refrig.
1 Tbls. contains .8 grams carb.

Default Quick Chow Mien

Here's one of the sample recipe from the web site.

Quick Chow Mien
Serving: 4
Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes
2 tablespoons vegetable oil
2 pounds ground beef or chow mien meat (available at some supermarkets)
Salt, to taste
1 teaspoon bottled fresh minced garlic or equivalent fresh garlic, minced
3 cups celery, sliced 1/3" thick
1/2 medium onion, sliced lengthwise (about 3 ounces)
1 cup beef broth or beef bouillon
7-ounce can mushrooms, sliced or stems and pieces, drained
8-ounce can bamboo shoots, drained, rinsed with water & drained
6-ounce can Dawn Fresh mushroom steak sauce (in a small yellow can, usually found near the bottled steak sauces
3 tablespoons Kikkoman soy sauce
1/2 teaspoon xanthan gum

1. Brown ground beef or chow mien meat in a non-stick, heavy 4-quart saucepan over medium-high heat, breaking up meat with a spoon and stirring frequently.
2. When browned and no pink remains, drain fat and add celery, onions and beef broth and reduce heat to low, cover and simmer till celery is tender.
3. Add remaining ingredients and continue to simmer till heated through. Sprinkle xanthan gum over and stir till thickened.
Nutritional Information:
Based on individual serving.
Carbohydrates: 10 g

Thanks for sharing! Yes, it is ok to share names of cookbooks. You can share a few recipes too, as long as you don't share the whole collection. The entire book is copyrighted, but individual recipes are ok to post.

I have tried the Quick Chow Mein, it is really good. My husband even thought it was good, and with just the two of us there were leftovers for another day. Served with a salad and it's a complete meal.
