Chinese Shrimp Kebobs

  • These can be either an appetizer or a main entree

    1/4 cup soy sauce
    2 tbsp. chopped garlic
    2 tbsp. chopped fresh ginger
    2 tbsp. thinly sliced green onion
    2 tbsp. splenda
    1 tsp. asian sesame oil
    1/4 tsp. dried red pepper
    1 1/2 lbs. med. raw shrimp, peeled and deveined

    Place all the ingredients, except the shrimp in a resealable plastic bag. Blend well. Add the shrimp, turn to coat. Refrigerate for 4-5 hours, turning the bag occasionally.
    Preheat the broiler. Remove shrimp from marinade and thread onto 8 inch wooden skewers that have soaked for at least 30 min in water. Set a rack over a broiler-proof pan and place the shrimp on the rack. Place under the broiler, 3 inches from the heat, and broil for 3-4 min. on each side or until they are pink.
    Variation-Place on a baking sheet that has been lightly sprayed with vegetable spray and bake at 400 degrees for 10-12 min.
