Curry Chicken

  • Chicken Curry

    1 large (Costco large ) package of boneless skinless chicken breasts
    2 cans Coconut Milk (not coconut cream) (19.053 grams)
    1 cup heavy cream (6.6 grams)
    2 tablespoons Curry powder (7.328 grams)
    2 teaspoons Cayenne pepper (optional for heat) (2 grams)
    2 teaspoons salt (or to taste)
    1 medium onion, chopped (9.493 grams)
    1 green bell pepper, chopped (7.652 grams)

    In a large dutch oven, slightly saute the onion in a small bit of cooking oil. Add the curry powder and salt. Add in the coconut milk and mix through. Add the chicken and cover over a medium heat. Cook until done - about 30-45 minutes. Add the bell pepper and cream and cook another 10 minutes. I test for flavor after the chicken is cooked through. Adjust/add seasonings as needed. Take a wooden spoon and chunk the chicken up a bit once cooked through so it absorbs more of the sauce. Very decadent!

    Servings: Makes a large pot full. Enough for probably 8-10 + servings. You can adapt the recipe for just one serving if you like.
