Feta Cheese Wrap
This is my favorite "diet food" EVER!! I would eat it even if I weren't dieting =) I got it out of a book called The Woman's Day Guide to Lasting Weight Loss.
Feta Cheese Wrap Ingredients: -Four 8-in. flour tortillas -For the dressing: 1 Tbsp lemon juice 2 tsp olive oil 1 garlic clove, finely chopped -1 cup fresh spinach, cut in strips -1 cup each finely chopped cucumber, tomato, and celery -1/2 cup shredded carrots -6 oz feta cheese, crumbled -1/2 cup cooked brown rice -20 pitted black olives: 16 chopped, 4 sliced and reserved for garnish (optional) Directions: 1. Prepare tortillas as pkg directs. 2. Whisk Dressing ingredients in a large bowl. Add vegetables, cheese rice and chopped olives; toss to mix and coat. 3. Place tortillas in a single layer on work surface. Spread 1/4 of the filling on each. Roll up and secure with a few toothpicks. Garnish each wrap with sliced olives. Makes 4 wraps Serving size: 1 wrap Calories per wrap: 360 *Makes sure you use 8-in. flour tortillas, rather than the 10- or 12-in size. The larger size will add 80 calories. I make this on a regular basis. You can add/subtract veggies and things you do/don't like. I don't like the cucumbers, so I add chopped pickles instead. Sometimes I add a little tuna. It makes a great lunch or dinner. Usually if I make it for dinner, I will also have some type of low calorie soup to go along with it. If you decide to try it, I hope you enjoy!! |
