Nearly "the Real Thing" Pizza
 
I got this recipe off the Atkins Low Carb Friends Recipe Board and somebody there said it may have originally come from the Low Carb Luxury website. Anyhow, I made it today and it really lives up to all the raves I read about it. It is called Deep Dish Pizza but most of the reviewers said they preferred it done in a regular pizza pan and cooked longer so that the crust gets thinner and crispier. If you like a pizza that is more like a quiche, then by all means, do it in a pie dish.

Crust:
4 oz Cream Cheese
3 Eggs
1/3 cup Cream
1/4 cup grated Parmesan Cheese
1/2 tsp oregano
1/4 tsp garlic powder
2 cups shredded Italian cheese blend (comes in a bag)

Beat together cream cheese and eggs until smooth. I used my hand held blender. Add cream, parmesan cheese and spices. Blend well. Spray pizza pan or pie dish with Pam and sprinkle the 2 cups of grated cheese even over it. Pour the egg mixture carefully over it. Bake at 350F for about 25 min. Remove from oven and let stand for 5 min.
(I baked mine for about 35 min in a pizza pan. It overflowed a bit so be sure to put another pan under your pizza pan to catch the drips.)
Spread on the crust:
1/2 cup any brand Pizza Sauce (or your own version)
Sprinkle on 1 cup of shredded Mozzarella cheese (or the Italian mixture or any kind you like on pizza). Add any other toppings you prefer.
Put back in 350 oven and bake another 10 minutes or until the top is bubbly and golden brown. Allow to stand 10 minutes before cutting. (very low carb)
I kept it simple and used some precooked bacon pieces and some fresh tomatoes but you could get really creative here with precooked loose sausage meat, or ground beef, or mushrooms and red peppers or feta cheese and pesto. Yum, that sounds good too.
This is a really quick and easy recipe. I will definitely be making this often and I hope you do too.

I made the recipe the other night....it is truly AWESOME!! Even my DD, the picky one who eats nothing new, loved it. DH loved it too. I read about a tweak that I may try next time I make it. (omit cream). Lowers the carb count and makes it crust a little crisper.
