Super quick and easy chickpea burgers

  • 1 - 15oz can of chickpeas, drained and rinsed
    1 - 4oz can of diced green chilies
    2 tablespoons of dried parsley (or 1/2 cup fresh
    2/3 cup of whole wheat bread crumbs
    1 egg, beaten
    S&P

    In a food processor, blend the chickpeas, chilies and parsley until smooth.
    Transfer to another bowl and stir in the bread crumbs and egg. Add salt and pepper to taste.

    Form into 4 patties (they will be about 4oz each). Drizzle a bit of olive oil in a nonstick skillet. Add the patties and cook about 3 minutes on each side over medium/high heat.
