what's in your fridge surprise...
this is what I used, you use whatever's in your fridge needing to be used up.
Stir-fry up some chopped garlic and boneless chicken pieces, toss in chopped onion, orange bell pepper, jarred roasted red peppers, artichoke hearts, black olives. A dash of salt and pepper (use the kosher salt, mmm). Then I topped the pan with a bunch of fresh spinach and let it wilt in. Then mixed in some spicy Rotel tomatoes. Separately boil up some whole wheat penne or whatever you've got. In a small bowl mix some ricotta with an egg(or not, whatever) and some shredded mozzarella. Mix this with the cooked pasta. Lightly spray a casserole dish, pasta mix on the bottom, top with the chicken mix and bake 350ish til hot, maybe 20 minutes or so Hubby gave it rave reviews!! |
