Smile Poached Orange Roughy

1/3 c. water
1/3 c. white wine
1 lb. Orange Roughy (2 smaller fillets usually work well)
1 garlic clove, minced
1 bay leaf
2 scallions, chopped
2-3 fresh sprigs of thyme
2 roma tomatoes, sliced vertically in half


Place fish in a large non-stick saute' pan, cover with wine & water. When liquid begins to simmer, add garlic, bay leaf, scallions, thyme, and tomatoes (cut side down) into the pan. Cover, and allow to poach for 10-15 min. (depending on the thickness of the fish). Fish is done when it flakes easily.

Serves 2

I served mine on saute'ed spinach w/ garlic, dh had his with brown rice. He said it was one of the best fish preparations I had ever made.

Fast, Easy, & Fantastic......the best way to cook!
